Eggs & Broad beans Recipe

This is a tasty dish, ideal for breakfeast or lunch!

Ingredients:

  • 3 eggs
  • Zucchini
  • 400g Broad beans
  • Feta Cheese
  • ½ tablespoon of salt
  • ½ tablespoon of cumin
  • 30g of gee
  • Spring onion or mild chili (optional)
  • 30ml lemon juice

Method:

  1. Soak broad beans overnight or buy a 300-400g can of broad beans.
  2. Heat up broad beans in a fry pan and mash into a paste.
  3. Add ½ tablespoon of salt, ½ tablespoon of cumin, ½ tablespoon of black pepper and 30g of melted gee to the fry pan.
  4. Chop up some spring onion or mild chili and add it to the broad beans mix along with 30ml of lemon juice.
  5. Crack 3 eggs into a bowl, add diced zucchini and mix together.
  6. Cook in a separate fry pan as an omelet.
  7. Place the broad beans and the omelet together on a plate and grate feta cheese over the broad beans.
