Lamb shank with okra, lentils & dates recipe

This is a delicious lamb shank dish called Sag Al Dan which infuses the sweet date flavour with one of my favourite vegetables, okra!

This dish will be suitable for low salt diets, free salt diets, gluten free diets and for those with diabetes.

Ingredients:

  • pieces of Lamb shank
  • 1 cup of brown lentil soaked with water
  • 300 grams of soaked dates
  • 350 grams of okra
  • ½ cup of minced mint
  • 1 tablespoon of Cajun spice or mixed spices
  • 1 tablespoon of oil
  • 1L of stock (shank, chicken, etc.)
  • 1 medium size red onion finely chopped
  • 2 cloves of garlic
  • 1kg of diced tomatoes, or a can of tomatoes
  • Garnish with parsley etc.

Method:

1. Heat the oil and add the onion until it softens.

2. Then add garlic, tomatoes, lentil and dates.

3. Let it cook for a few minutes and then add the shanks into the mix.

4. Reduce heat and the food will be ready in 15-20 minutes.

5. Add the mint.
