This is a delicious lamb shank dish called Sag Al Dan which infuses the sweet date flavour with one of my favourite vegetables, okra!
This dish will be suitable for low salt diets, free salt diets, gluten free diets and for those with diabetes.

Ingredients:
- 1 cup of brown lentil soaked with water
- 300 grams of soaked dates
- 1 tablespoon of Cajun spice or mixed spices
- 1L of stock (shank, chicken, etc.)
- 1 medium size red onion finely chopped
- 1kg of diced tomatoes, or a can of tomatoes
- Garnish with parsley etc.
Method:
1. Heat the oil and add the onion until it softens.
2. Then add garlic, tomatoes, lentil and dates.
3. Let it cook for a few minutes and then add the shanks into the mix.
4. Reduce heat and the food will be ready in 15-20 minutes.
5. Add the mint.
